\u00d6zellikle jelatin gibi higroskopik malzemelerde, nem i\u00e7eri\u011finin bilinmesi \u00e7ok \u00f6nemlidir, \u00e7\u00fcnk\u00fc bunun kaps\u00fcl mukavemeti, sal\u0131m \u00f6zellikleri ve depolama ve ta\u015f\u0131ma s\u0131ras\u0131nda genel stabilite \u00fczerinde \u00f6nemli bir etkisi vard\u0131r (1).
