stabilit\u00e9 des prot\u00e9ines est fondamentale pour la biochimie moderne, la recherche pharmaceutique et la biotechnologie. La stabilit\u00e9 des prot\u00e9ines d\u00e9termine non seulement la dur\u00e9e pendant laquelle une prot\u00e9ine th\u00e9rapeutique peut rester active en solution, mais aussi son aptitude \u00e0 la formulation, au stockage et au transport (Wang 1999).
